🍊🍗 Roasted Orange Chicken 🍗🍊
Ingredients:
For the Chicken:
- 4 bone-in, skin-on chicken thighs
- 1 tbsp olive oil
- Salt and black pepper, to taste
- 1 tsp garlic powder
- 1 tsp paprika
- 1 orange, thinly sliced
- 1 tbsp fresh thyme (optional)
For the Orange Glaze:
- ½ cup fresh orange juice
- 2 tbsp soy sauce
- 2 tbsp honey
- 2 tsp orange zest
- 1 tsp minced garlic
- 1 tsp freshly grated ginger
- 1 tsp cornstarch + 1 tbsp water (to make a slurry)
Instructions:
- Preheat your oven to 400°F (200°C).
- Season the chicken: Rub the thighs with olive oil, salt, pepper, garlic powder, and paprika.
- Sear the chicken: In an oven-safe skillet over medium heat, sear the chicken skin-side down until golden brown (about 5–7 minutes). Flip and cook the other side for another 3 minutes.
- Add the oranges: Place orange slices around the chicken in the skillet.
- Roast in the preheated oven for 25–30 minutes, or until the chicken is fully cooked.
- Prepare the glaze: While the chicken roasts, combine orange juice, soy sauce, honey, zest, garlic, and ginger in a small saucepan. Bring to a simmer for 5 minutes. Stir in the cornstarch slurry and cook until the glaze thickens.
- Glaze the chicken: Once roasted, brush the glaze over the chicken. For an extra caramelized finish, broil for 2–3 minutes.
- Garnish with fresh thyme and a sprinkle of orange zest if desired.
