Ingredients:

For the Chicken:

  • 4 bone-in, skin-on chicken thighs
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 orange, thinly sliced
  • 1 tbsp fresh thyme (optional)

For the Orange Glaze:

  • ½ cup fresh orange juice
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 2 tsp orange zest
  • 1 tsp minced garlic
  • 1 tsp freshly grated ginger
  • 1 tsp cornstarch + 1 tbsp water (to make a slurry)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken: Rub the thighs with olive oil, salt, pepper, garlic powder, and paprika.
  3. Sear the chicken: In an oven-safe skillet over medium heat, sear the chicken skin-side down until golden brown (about 5–7 minutes). Flip and cook the other side for another 3 minutes.
  4. Add the oranges: Place orange slices around the chicken in the skillet.
  5. Roast in the preheated oven for 25–30 minutes, or until the chicken is fully cooked.
  6. Prepare the glaze: While the chicken roasts, combine orange juice, soy sauce, honey, zest, garlic, and ginger in a small saucepan. Bring to a simmer for 5 minutes. Stir in the cornstarch slurry and cook until the glaze thickens.
  7. Glaze the chicken: Once roasted, brush the glaze over the chicken. For an extra caramelized finish, broil for 2–3 minutes.
  8. Garnish with fresh thyme and a sprinkle of orange zest if desired.
